The Audrey left Reunion Island to meet other realities and cultures and achieve new professional challenges. He likes to travel a lot and on one of these trips, in Argentina, he met Esteve, a Catalan with whom he now lives on horseback between Girona and Barcelona. He was born in Saint Denis, the capital of the island and a real waterfall of cultures. Malgaixos (from Madagascar), Arabs, Indians, Chinese, Europeans... coexist with good harmony. The kitchen is no stranger to this mixture that the Audrey has also inherited. It is a very aromatic cuisine, thanks to Asian species, especially, but also to local crops such as vanilla, the\ ‘combavas\’ (a citrus native to India) or gingebre-mango. With this and other ingredients, the Audrey prepared a dinner for friends based on different\ ‘rougails\’ (a type of stew);\ ‘Samoussas\’ similar to Indian empanades of the same name and\ ‘bouchons\’ a paste porro and sausage. On the island it is also customary to macerate the rum that is distilled is known as\ ‘rhum arrangé\’. They put herbs and fruits on it and let stand for months.
